During service the chef cooks and hosts: introducing each course, answering questions and, if you want it, running a short demonstration or a question session between courses.

• Celebration dinner: a birthday, anniversary or engagement for twenty to forty, with the chef hosting the room as well as cooking for it

A tasting dinner for eight in London sits at a different level to a three-day residency in the Alps, and a chef with a current television series commands more than one whose fame is a decade old.
