No booking window months ahead, no neighbouring table, no closing time. Six to sixteen guests is the natural range for a tasting menu at a domestic table, and three to six months of notice gives you the widest choice of chefs.
Formats for a Michelin Star Chef at Home
- The tasting menu: eight to twelve courses over three to four hours, the format most starred kitchens are built around, served at a single table with the chef introducing each dish

What the Chef Needs From Your Kitchen
Less than most hosts fear. A starred chef is used to cooking in a domestic kitchen and will adapt the menu to the room rather than ask you to change the room. What matters is a call or a short visit beforehand, so the brigade knows the hob, the oven capacity, the fridge space and where the plates will be dressed. Anything missing, from a water bath to a set of plates that suit the menu, is brought in.
A tasting menu for twelve is usually cooked by the chef with two or three from their own team, plus front-of-house staff for service and clearing, and the kitchen is returned to you as it was found. Where a house has no realistic kitchen for the numbers, a marquee kitchen or a hired venue solves it, and the chef’s team will tell you honestly which is the better route.
How the Menu Is Built
The menu starts with a conversation rather than a printed list. The chef asks about the occasion, the season, the guests, any dietary requirements and any wine you want the courses built around, and proposes from there. Most clients see a draft within a week of that call and settle the final menu two to three weeks before the evening, because a starred menu is sourced against a fixed date, and some of the ingredients are secured days ahead rather than hours.
Signature dishes from the chef’s own restaurant are usually available, and many hosts ask for one or two as anchors. The rest of the menu is typically written for the table, which is part of what makes the evening different from a night at the restaurant.
Wine, Service and the Shape of the Evening
A tasting menu at home runs to the rhythm of a restaurant service: arrival drinks, a first course within the hour, courses spaced so the table never waits and never feels hurried, and a natural pause before dessert. A sommelier can pair from your own cellar or bring a matched flight, and the chef will usually come to the table between courses, or at the end, depending on how much of a presence you want.
